Traditional Fruit Cake

We make our cakes in partnership with Camosun College.  We use only the finest ingredients.  The proportion of fruit to batter is high, making the cakes rich and moist.  We douse our cakes in VSOP brandy so they will keep without refrigeration but can be frozen.

Here’s what’s in our cakes.  Fruits: cherries, raisins, currants, dates, glace citron, glace ginger, glace orange peel, glace lemon peel, and glace pineapple.  Nuts: almonds and walnuts. Spices: ground cinnamon, ground allspice, ground cloves, ground coriander, ground ginger, ground mace, and ground nutmeg.  “Dairy”:  unsalted butter and eggs.  Dry ingredients: flour, baking powder, golden brown sugar and salt.  All steeped in VSOP brandy.

Two options:
Original "Family" size, 750 grams. 
New for 2021, smaller "Gift" size, 375 grams.
