We steep our cakes in VSOP brandy so they will keep without refrigeration but can be frozen. We make our cakes in partnership with Camosun College. INGREDIENTS: Fruits: Glace fruit (cherries, citron, ginger, orange peel, lemon peel, and pineapple), raisins, currants, dates. Nuts: almonds and walnuts. Spices: cinnamon, allspice, cloves, coriander, ginger, mace, and nutmeg. “Dairy”: unsalted butter and eggs. Dry ingredients: flour, baking powder, golden brown sugar and salt. All steeped in VSOP brandy.
